Recipe for delicious Coconut rice

Coconut rice has been in the menu of alot of Nigerians since the times of our fore fathers, its one yummy food, but can easily be messed up, so lets go over how it is prepared....

Ingredients you will need:
Maggi cube(2)

2 cups or as much as you require

1 big coconut
4 Scotch bonnet(ATARODO)



4 medium sized tomatoes
Start by parboiling the rice, drain and set aside, break your coconut and use a grater to grate into small fine pieces, then put the grated coconut in the blender, add a little water and blend, when its done, pour it into a sieve and squeeze the juice from the coconut,( that is your coconut milk), add water if you feel you can get more milk from the grated coconut, then set aside(take note,we  only need the milk for this recipe)but you can put the coconut shaft in a frying pan, add half cup of sugar, fry until brown that's how u make coconut candy, now back to our coconut rice.

1 large onions.
Wash your dried fish in hot water to remove the sand,then open the fish and separate bones from fish, the next step will be to make your stew.

2 Bell peppers

Blend the bell peppers, onions, tomatos and red chilli pepper then fry in already heated canola or soya oil(you can use any oil you prefer, I go for oils with less or no cholesterol) then allow to fry, when it starts to splash, add whatever meat you intend to use and the stock, if you are doing without, its fine too(lol)just add your dried fish that u have picked out while separating the bones, the maggi and the salt ,then and add the coconut milk and stir, when this is all ready, combine the stew  with the parboiled rice making sure the sauce or water in the rice are on same level,then taste it and adjust the seasoning to ur taste...VOILA THATS HOW YOU MAKE COCONUT RICE THE OLD FASHION WAY.
